Hello,

I recently made a Hackintosh using an old Dell workstation (T3610). I installed Big Sur successfully with Opencore and got it up running with a Vega64. I realized that using MacPro6,1 smbios is not ideal for the Vega64 and wanted to change the smbios to iMacPro1,1. I did change the smbios to the iMacPro1,1 in config.list but ending up stuck on the apple logo, thankfully I have a backup of the EFI folder. Not sure what I am doing wrong, any help would be appreciated.

12-Core E5-2697 v2 (Ivy Bridge-E)
Gigabyte Vega 56

I don't see any glaring omissions in your config, but you should add -v to your boot args for verbose boot so that we can see where your system is hanging up on boot. also try clearing your NVRAM after switching SMBIOS. there might be something hanging around in there.

iMacPro1,1 is Skylake-X, which is far from ideal for your old Ivy Bridge-E CPU. I'd stick with MacPro6,1 as a better foundation for your system.
