Boot loader cannot be found, am I missing something basic?

Hi,

This is driving me crazy as I have been trying to the last 2 hours. I created a Catalina boot USB following the instructions to the letter and using unibeast (I've done this on two macs now just in case big sure was messing something up on my newest one - and not injected any changes as I just want it to get to install screen). My motherboard will not see it as a bootable drive.

When I go into boot options on my MSI B460m Mortar wifi it just shows "enter setup" or "windows / enter setup" if I don't disable that drive.

I would try removing the windows m.2 drive but as the USB boot option isn't even showing here I'm not sure how to troubleshoot this. I followed the bios settings from the main tutorial, MSI and this cofig using my same mobo.

I tried a windows installation drive which boots first time, so my question is "what could I be doing wrong"? I'm going around in circles...

Am I missing something really basic?

Is it possible that in Disk Utility, you did not select the option to view all devices? And only the volumes?
