Hello, i was wondering if my current build would be a good joice and if some things will work?

Mainboard
ASRock Z370 Extreme 4 Intel Z370 So.1151 Dual Channel DDR4 ATX Retail
+TP-Link TL-WDN4800 N900 WLAN Dual Band PCI-E Adapter Will this work for AirDrop/Apple Continuity etc.

Any of the three motherboards you have list should be fine.

For Wi-Fi, I prefer using a Wi-Fi/Bluetooth card used in real Macs with a PCI-e adaptor. Example, BCM94360CSAX with PCI-e adaptor.

i7 8700K is fine.

There are currently no drivers for the GTX 1070 Ti for macOS Mojave.

Best to check the motherboard manufacturer's "QVL" or Qualified Vendor List for compatible RAM.

SSD is fine. If you want more speed, I suggest using an NVMe SSD rather than trying to use RAID.

Hard drive is fine. Any standard SATA hard drive should work.

If you will be using a discrete graphics card, maybe a slightly higher wattage power supply will be a good idea.

How likely will it be that mojave will support this card? Is there a list somewhere with supportet GPUs by Mojave? Haven't found any so far..

My guess is that macOS Mojave may very well never have native support for a GTX 1070. However, I do believe that Nvidia will eventually release web drivers for Mojave. How long will it take Nvidia to release their driver? That's anyone's guess. It can be tomorrow or it can be next year.. I believe that next year is a better bet, but that's just me guessing again.
