Hello again everyone!
I wanted to upgrade to catalina, as i'm switching to AMD. But i'm stuck at the installer not booting (same result with direct upgrade and USB install stick). Has anyone got it working by any chance?

If you haven’t seen the issues related to 10.15.1 with AMD GPU’s, make sure you have the newest WEG installed.

Yes I do, same with Lilu. I get a few errors, i tweaked a few kexts and things in clover I found here and there, but nothing changes, if you can see what's wrong in my screenshots…

I also added the ssdt-ec in the patch folder

The screenshots don't show which kexts were in the backtrace for the KP. See if you can capture that. Also upload your Clover EFI folder. FYI - I repurposed my EP2C602 into a Plex server, so it is not longer running macOS. I personally haven't tested Catalina on it. I do have Catalina running on a Dual Xeon board (older gen, X5690's) so it should be possible.

Could it be the ethernet kext then? I don't really know where to look, at first I thought there was a problem with the lilu error "user failed to change memory protection"… Here is the last Clover efi folder I used

I can look at the EFI folder later, but

1. you don’t need any kexts for Ethernet if you follows the guide

2. when troubleshooting, always start as minimal as possible. No need for audio or Ethernet to just boot. Remove anything non-core.

I still can't see the kext involved in the KP backtrace. Try filming Clover booting using slow-motion. Sometimes thats the only way I can catch the issue because it scrolls so fast.

Use Clover Configurator to update the Bios version indicated in the SMBIOS. Newest released for MacPro6,1 is from 07/24/2019. Catalina may expect or require the faux change. No need to change other details like SN or UUID.

Test without SSDT-EC.aml. Shouldn't be necessary for booting. You appear to be missing USBInjectAll.kext.

You may want to create a proper SSDT-CPUPM.aml so that NullCPUPowerManagement isn't required. Can be done from another Mac or if you still have a prior OS functioning. See install guide.

I assume you are using the RX 5700 XT. I have no knowledge if that GPU requires anything special other then just WEG in 10.15.1.
