you should re check your config.plist, read post 2 of the guide
Should i replace SSDT-EC.aml to SSDT-EC-USBX.aml? Because based on the dortania opencore guide i should.
And should i change MinDate or MinVersion?

MinDate and MinVersion is set fine for Catalina, you would be having a different issue if that was set incorrectly

you could certainly try using SSDT-EC-USBX.aml instead

also check your AAPL,ig-platform-id as you have still left that as a Skylake system

The problem is looks like the same then the first try.

you didn't use the files from my guide

setup your VoodooI2C kexts after installation

use a usb mouse for installation
 
I don't know which files do you think. After USB installation i replaced the whole EFI folder to your EFI folder.

you setup VoodooI2C after you have installed macOS
 
A tried with wired mouse, but the result is the same.
you will have to zip and upload your EFI

also a new picture of where it hangs
