Many thanks @flicka for posting easy and quick solution. I can confirm is working on Gigabyte Z490 M Gaming X too.
After updating to Big Sur 11.3 I lost my DP Audio since Chris1111 VoodooHDA-OC is no longer working.

So I switched back to AppleALC, I added alcid=1 in NVRAM and then followed your guide.
After restart i got back all my audio ports, including DP Audio

@giacomoleopardo
Did you solve the problem with the "unplugging and replugging". I kind of have the same problem here.

Asus TUF Gaming Z490
Intel UHD630
I'm sorry, no. I no longer have the rig!
The last few posts were surely about HDMI Audio, but not quite the issue I was writing about in the original post.
One thing I didn't try, just out of curiosity: Windows 10 behavior! Would you mind to try to install it and report back?

For my Asrock Z490M-ITX I found this workaround for getting HDMI to work:
In the EFI/OC/Kexts section add:
”FakePCIID.kext" and "FakePCIID_Intel_HDMI_Audio.kext"
and declare them in the Kernel/Add section ("FakePCIID.kext" before "FakePCIID_Intel_HDMI_Audio.kext")
Still in the config, in the
DeviceProperties/PciRoot(0x0)/Pci(0x1f,0x3)
section add:

device-id | Data | 709D0000

For this result:

hda-gfx | String | onboard-1
layout-id | Data | 31000000
device-id | Data | 709D0000

After a restart, your HDMI device will be in the Audio options.
It seems that using Layout-id 51 (33 -> Hex) (Asrock Steel legend)
eliminates a problem with the Front Mic (Hissing) which
is present with the default 49 (31 -> Hex) Layout-id.

Duuuude thank you!!!!! Worked perfectly! ASRock Z490 Phantom Gaming ITX/TB3 – only thing I changed was "layout-id | Number | 11" and we're rocking. Thanks so much for the info!!
