I deleted all graphics kexts because they were preventing me from booting into the installer.

No expectation of working graphics without the graphics drivers.

Then what am I to do?! If I cant put the graphics kexts back in then I have no way of enabling GE/CI without. On your Github Repo for laptop patches, I see you have a DSDT patch for mixed setups (7-Series with HD3000), do you think that might help?

You need to put the kexts back (or do a fresh install). There is no need to delete the kexts with a correct Clover setup.
