Looking to build and was hoping to build an 8 core machine but noticed there are none listed in the buyers guide.
Has anyone tried this yet?

8 core CPUs are only currently available from the previous X99 platform (e.g. Xeon E5 2620 v4 / Core i7 6900K) and the current X299 platform (Core i7 7820X). But both platforms are not natively supported in MacOS, which is why there are none listed in the Buyer's Guide. However, there are ways to run MacOS on X99 and X299 systems, and there are success stories on these forums. Search for them if you are interested.

Alternatively, you may wait until the iMac Pro is released next month. It is possible that the iMac Pro may use hardware related to the X299 platform, and if that is confirmed then the X299 platform will probably gain native support in the future updates of High Sierra.
