6800k X99 Buying advice Needed.

First of all Thanks to Tonymac for my first build X58a UD7, i7 920, HD5770. Which has worked for 6 years flawless. Time to upgrade, help and advise appreciated. I know X99 chipset is not supported by Apple needs lot of tweaking and work around. I am assuming its worth taking the trouble for 6 core 12 thread benefit. Not decided on OS, would like to go with El Capitan or Sierra.

PURPOSE: Photoshop, Light Rooms, Premier Pro 4k Video Editing, After Effects.
I HAVE VERY LIMITED HARDWARE AVAILABLE IN MY REGION (INDIA) FROM 'BUYER'S GUIDE' LIST. WONDERING WHERE TO START?

BUDGET: $3000 approximately for 1) Processor 2) Mobo 3) Graphics 4) RAM 5) SSD
All other components are from my old system.

You can reuse the case from the old build. A 6 year old PSU will likely not be up to specs to power a new X99 system. What brand and model do you have ?

Thanks for pointing it out, will be changing to new 750w unit.

You are right, also 960Pro series is not listed in the Gigabyte X99 MoBo compatibility. I am also thinking of 950 Evo 500gb which is a lot low in price, but even this also not listed in compatibility.
Initially I will be testing with OCZ Vertex-3 120gb Sata3.
 
I am about to buy the hardware listed below, any compatibility issues raised will be a great help at this point.

7) I am considering Samsung 950Evo 500gb assuming compatible with MoBo, though test will be done with OCZ Vertex-3 120gb.

I was contemplating Quad vs Hexa for a little while as well. In the end I think I'm going to go for the Hexa. Why? More future proof, Cannon Lake will bring Hexa to the mainstream in 2018 and right now I can get it for basically the same price as a Quad core CPU from my local MicroCenter.

So nice to know future possibilities. I am taking this route for the benefit of MORE CORES and QUAD CHANNEL ram at this point of time.
 
FINAL LIST, ORDER PLACED. Thank you all for the suggestions and support. I am thinking to attempt EL CAPITAN or SIERRA installation, any suggestions on which guide to follow?

I may use SSD 850 EVO 1TB for temp storage data for quick access, not sure if I need this or NAS will serve my purpose.
I have 5 hard disks from previous build which I am thinking to move to a NAS for Data Storage.
