If it is the same USB stick in all attempts, then trying a different USB stick could be a good thing to try. Also completely erasing the thumb drive and starting over could be a good idea too. You could use secure erase in Disk Utility and then repartition the drive.

I've been having odd issues with Catalina that varies from the macOS update not completing the last step blessing(setting the boot OS) and not deleting the installer to Clover refusing to install to the hard drive. You could google disabling SIP and see if that helps, you have to boot the macOS installer and run a terminal command so you will likely have to do this on a real Mac. Apple is being aggressive at protecting files.

The process for disabling SIP is to reboot the macOS machine(with a recovery partition or real Mac can boot recovery from the internet) holding down option+R, then you want to open a terminal window(can be found under tools at the top menu bar at the desktop) and type csrutil disable. Then reboot Mac in to macOS and try running Unibeast again.

yes but SIP is only available on catalina no ? i don't have catalina running nowhere. meaning it does'n exist prior to catalina ?

The funny thing is sometimes the sticks are too new. I have better luck with older 8gb USB 2.0 sticks.
