So after talking to many different people about my PSU requirements it appears my options are either 2x XFX 5870's (£350) or 2x EVGA GTX 460's (£280).

I would like you lovely people to either vote above for the XFX 5870's or the GTX 460's.

Oh and one question, obviously both sets of cards, regardless of which ones I choose will either be Crossfire or SLi in Windows 7 for gaming. But will OS X just ignore the crossfire bridge if I go with the 5870's and ignore the second 460 if I go with the 460's? Or will it get confused and not boot at all unless I open up the case and physically remove the crossfire bridge between the HD 5870's, or (in the case of the Nvidia cards) the second GTX 460?

I would go for the 2 x 5870, you would have a stable setup with NO FREEZES. I own a 5850 and a GTX 460 and my GTX 460 freezes once a day now, not a good idea to go with nvidia fermi at the moment see the forum for details

Having two GTX 480. Runs nice and smoothly - no freezes at all. Just installed Chameleon and the NV - Driver Package on Mac Pro 5,1.

Ok so after many weeks of researching I have decided on the final components, here is the entire spec:

Coolermaster HAF 912+ (Case)

Gigabyte GA-X58-UD3R (Motherboard)

Intel i7 930 (Processor)

Coolermaster V6GT (CPU Cooler)

6GB Corsair Dominator GT 2000MHz 8-9-8-24 (Memory)

2 x 500GB Samsung SpinPoint F3 SATAII (Hard Drives)

XFX Radeon HD5870 1GB (Graphics Card)

Sony Optiarc AD-7260B (DVD/RW)

Corsair TX650W (PSU)
