Hi, I apologize if what I'm saying is a bit OT, but I really need your help.
I own an Acer E5 574G which is quite similar to your laptop and I'm trying to get the trackpad working with VoodooI2C. I've followed the official guide and after patching the DSDT for GPIO Pinning, my DSDT file looks like yours, but I still have issues.
When I boot my laptop with the patched DSDT The keyboard works randomly and the trackpad doesn't work at all (I have the VoodooPS2 kext in /L/E since the keyboard is PS2.. but maybe this is the cause of the issue?).
I've read in the I2C thread that you've solved and you managed to use the keyboard with PS2 and the touchpad with I2C.
Could I ask you if you did anything particular apart from following the VoodooI2C guide? Which kexts are you using? (And if it's not too much, could I have a look at your patched files?)

I've searched and read a lot but I still can't figure it out.. I just thought that since he had basically the same issues the I have now and we have very similar laptops it would have been easier to directly ask.

What version of VoodooI2C are you using? I have the same issues as yours on any version higher than 2.0.3. So, I sticked to 2.0.3 now and it works, though not flawlessly.

I've made a GitHub repo for tracking (and reverting bad changes), you can pull my current files from there, if you want

I don't understand your question.
I mean, should i do anything to futher patch the graphics card? The battery life and strange reaction to HDMI plugging kinda bothers me. And what about other issues mentioned earlier, like non-functional battery status in statusbar and random kernel panics?

What do you mean by "strange reaction to HDMI plugging"?
And there may be other reasons for poor battery life (check activity monitor for programs/processes using CPU when you don't expect).

I've tried with 2.0.3 as well and unfortunately that didn't work. Do you have VoodooPS2Controller
.kext installed as well? And do you get multitouch gestures with that VoodooI2C version?
On which macOS version are you?
Regarding the HDMI issue, on my laptop everything works just great, with the Nvidia card disabled, BTW I'm on Mojave 10.14.1.
