AMD and NVidia both came out swinging with lower prices than ever. PS5 is expected to do the same. When I was installing the beta, formatting as HFS greyed the disk out for me too. I re-formatted in APFS and it worked. I think it's a new version of APFS though. When I boot back into Catalina, it tells me that the BigSur drive is incompatible... (they are both inside the laptop..)

Have a look here and familiarize yourself with the new plugins for BigSur - they need to be enabled BEFORE the base kext - give it a go and let us know?
