Thanks so much.
So to install Ventura on a Z490 GamingX with an i5 and the onboard graphics I should just use that whole EFI folder and populate the Serial Number, MLB, System UUID and ROM?
I note your specs in the side bar now list an RX6900, rather than the 5600 that you fixed the fan...
So, with the above corrected in my EFI (attached earlier) I get the boot menu which allows me to select the USB installer, I then get a bunch of verbose output and then eventually it goes black and thinks about things for ages without ever bringnig up the Big Sur installer.
Out of curiousity...

I assume that after booting from the installer created with this method it should reasonably quickly get to the standard installer screen? I get white on black apple screen for a good twenty minutes.
Thanks. Any hints about how and where I make that change? Or the specific tool/area that I need to read to learn how to do it?
Is it literally as simple as opening config.plist with textedit and changing the value there and rebooting?
Cheers!

The 3 threads below have some great information and I've read through all of them but as I'm just picking up basic understanding as I got a little confused by about the relevant with similar threads about where to start with the 3...
Thanks again for the direction, I'm most of the way there now and will put together a short post on the whole process once I'm done.
Main things to resolve at the moment are:
