you can try add/remove some clover dsdt patch and remove ssdts in EFI to troubleshoot(keep LPCB9 for native powermanagement and EC), some ssdts is different for different boards.
Here is my EFI, i was edited my config to match your hack so you can give it a try. I have a H97 mobo, i think you can use it because they are all series 9 mobo
this is normal on catalina, macos create a partition for system files and make it read only, and a data partition for you to write your data, install apps...
In Catalina, system partition is Read-only, so it automatically create a new "data" partition for any changes you made. It's normal, don't try to delete or merge them
