Can't remember which version of MacOS was when the sleep timer slider was taken away. Probably whether the slider appears or not also depends on the Mac model (SMBIOS).
Have you overclocked the CPU?
What AVX offsets?
Did you try with all USB devices other than a mouse & keyboard disconnected...
You wrote earlier that you think the reboots might be sleep related, so in order to maybe rule this out, go to System Preferences > Energy Saver and enable "Prevent computer from sleeping automatically when the display is off" and disable "Put hard disks to sleep when possible".

Can you try to have just one drive at a time? In just either one of the sockets at a time? I mean if it worked maybe this could be a valuable bit of information for the future development.

About sleep & USB ... I haven't been able to wake the machine up by Bluetooth for ages. If I remember correctly it is because power is not supplied to USB during S3 sleep and that is just the way it is on the X299. And I am fine with that.
But, I have noticed that on wake there is an error like...
@zebalo Hey you might be able to solve the KP on wake by moving the culprit NVMe drive to another m.2 socket.
That is what - rather oddly - solved it for me. I have two drives placed in two sockets and reversing their placements allows the system to wake up from sleep OK.
Can you try to go back to the previous version?
I had the same problem with the latest BIOS (which for my mobo is 3006) where wake from sleep would always result in KP. Seems to have something to do with the combination of Samsung EVO 970 and the latest BIOS and Apple's IONVME kext. At least...
