So I think I may have found out whats causing the stuttering. People came to the conclusion that Yosemite and Mavericks are not caching textures on the GPU's VRAM, resulting in poor performance with games that have a high polygon count. Hopefully with this information, someone can make a fix...

I've tried every 10.10.2 driver available and they all say my system isn't supported, yet my 780 shows up correctly in about this mac. :(
