After a lot of back and forth and testing I found out that one of my RAM sticks was faulty. Testing each of the 4 sticks separately showed that I one was throwing errors. Getting it replaced soon and only running on 16GB at the moment, which is still fine. Thanks for the help guys!

Yes. Even done it again after from the Rescue Disk to make sure. Didn't help unfortunately.

Changed it back to MacPro 3,1 and repaired disk permissions. Unfortunately I got a kernel panic right after it woke up from sleep after.
