I can recommend the Sabertooth ALL THE WAY. It has never had an issue, and everything but speedstep and power management works on the board. The board overclocks well with the 3930k, and has great cooling over the chipset and the capacitors around the CPU.
OS X drops support / has different kexts for different hardware every iteration. I would search the forums for people who have similar components as you (with build guides/how-tos), and follow what they did. As a last resort you can always ask someone who has your hardware.
All Kepler GPUs currently are supported in OS X.

You may be better off using one of the gigabyte boards in the buyers guide. Few, if any people have used that intel board on their builds and so if you run into problems it will be harder to make right. Inno3D GPUs are typically only sold in the asian market, and so I am unsure how it will...
Specs-wise, yes I think it would be possible to get OS X working on your system. Try and find someone who has done it already, and go off their build. Thats my recommendation. It will be harder on an OEM laptop though.
A 27" at 1440p would be great, anything over 24" for 1080p looks way too pixelated (in my opinion). There are cheap korean 1440p 27 inchers, as well as the more expensive Apple and Dell Monitors.

I believe OS X 10.7.5 and 10.8.2 brought native support to the kepler series cards by Nvidia. If you can get a copy of the latest 10.8.4 or even 10.8.2 it would work with GraphicsEnabler=No
The amount of drives your have n your system won't cause any problems with speed. As long as you install programs and commonly used files to your solid state drive, you will be fine.
