Would you mind trying to enable standby? That's what it colloquially referred to as sleep; in that RAM is powered but the CPU is not. Does it enter standby a few seconds after you sleep from the apple menu? Does it wake immediately after sleep?

So what actually is your geek bench score? I have not dissimilar specs to you and mine doesn't feel sluggish at all. My geek bench is 5905 single core, 27129 multi core, which is about what I was expecting.
Your config.plist has 0x59120003 for ig-platform-id - which is a connectorless platform id. That tells macOs that there are no video outputs. Your IGFX will be accelerating H264 decoding, but it won't support video output.
If you change to 0x59120000 then you should come up with two working...
I think your IGFX should probably be 0x59128086 - that corresponds to UHD630 (0x5916 is the deviceid for HD630 from Skylake. I suspect that changing to iMac18,1 is what fixed your problem.
However, if it ain't broke, don't fix it... ;-)
I'm fairly sure that's a myth. There's nothing about changing that value in rehabman's guide, and also I don't think it makes sense from a technical perspective.

HS11 and HS12 are the two front pabek USB2 ports on a header on the board (physically next to the front panel USB3 ports, which are HS01/SS01 and HS02/SS02).
My problem is when I run Photos.app, after a few seconds the system freezes. log show gives GPU errors. Sometimes the same happens in QT playing Sony 4k demo. Playing 4k demo shows low CPU but the playback is a bit choppy.
I have Rx560 4GB (67ef deviceid). Integrated UHD630 is enabled...
I think I'm making progress. Mine reliably freezes within 30 seconds of opening photos. I can still connect with SSH and do log show to see what's going on and there's a lot of Faults from the GPU and restarts etc. It's to do with using the GPU for h265 for HEVC encoding or decoding, not sure...
