It is mandatory to have Open Core 0.7.4 because the update process could not go through the end or could stall in the middle.
Before restarting, don't forget to validate your config.plist because new quirks or others can have appeared with the new version of Open Core.

The starting drive is not coded in OC config but in Preferences System in Mac OS like true Apple Macs. It is different from Clover config.
The Clover bootloader (v5125) uses now OpenCore to start Hackintosh but it is not yet stable.
If you want to have OC GUI at start, in your config.plist go to Misc > Boot > PickerMode and change it to External.
Replace your EFI/OC/Resources folder by the one attached here and restart.
In Terminal, enter nvram -p or look at Hackintool > NVRAM and see if the variable csr-active-config is correctly set.
If not reset Nvram at start in the picker.

I had to solve the same problem two months ago when I changed my display to a new one.
The method I choosed is explained here on Apple Discussions. It uses a lot the Terminal and you must be savvy with it.
It's not a bootloader problem but something related to Catalina and your display.

You don't need to go over to Windows. If there is no DSDT.aml in your OC folder, in Mac OS X, open MaciASL.app and it will dump your genuine System DSDT.

I confirm that your patch works with Gigabyte Z370 Aorus UG 2-OP with BIOS F15a.
The SSDT way works too.
I am now under OpenCore 0.5.9 and the easiest way is the SSDT way but we can also patch /EFI/OC/config.plist in ACPI>Patch>item 0
