MacOS can read NTFS but can't write without additional installs. Windows can't see MacOS partitions, naturally. But yes you can boot between the two - just need to select boot drive at POST.
When you start up the laptop, you should see a menu after the Dell Logo disappears. There's an option called modGRUBShell. Select that and follow the guide. It disables the CFG-Lock because Dell doesn't allow us to do that in the BIOS.
I haven't got an external monitor to test so I'm not sure. I can't tell if the audio is coming out of the top facing speakers, but I'm not sure how to fix it if it isn't.

The manufacturers usually say whether the drive supports MacOS. If not, you can always look for reviews on Amazon to see if anyone's bought it to use on their Mac. Personally I've got a Seagate Barracuda 510 m.2 drive.

Thanks for that reference repository. I've managed to improve my EFI based on that and got Audio to work 100% now. However, the sleep issue for the XPS15 is unfortunately a Dell BIOS bug. The same behavior could be seen with any Linux kernels and Windows 10 itself if you enable S3...
yeah I did but it didn't work. I replaced layout 11 in AppleALC with my pinconfig and it fixed the high CPU load issue but I still haven't figured out how to fix the headphones jack or built in "subwoofer".
If you're using Win10 2004, it's a lot harder (blame Microsoft).

Not sure about your XPS 15 but with the latest one (9500 year 2020), Dell's S3 sleep implementation in the BIOS is broken. You wake up to a blankscreen or dell logo if you have sign of life enabled.
You can confirm this by enabling S3 with Win10 as well (by default S3 is not used on Windows).
I've created a repository on GitHub to share my progress with getting Catalina to run on Dell XPS 9500.
It is almost fully working for me but there may be several other things I haven't tested, including HDMI video/audio output.
Any help on fixing the outstanding issues appreciated - headphones...
