Yes, unfortunately the setting is always reset to the default value (rainbow). It's because of the RAM itself, it stores it only in the volatile memory area --> so these settings are deleted after shutdown. Sorry to tell you this now but there is no way. So at least as far as...

A1: Yes of course, that in itself does not matter. And the difference between AIO and air cooling is small. (Starting with very good products in both cases)

NZXT AIO
NZXT Smart Device V2

I'm not quite sure, but I don't think it will work that way without further ado. The mainboard is the heart of the whole thing. You should look for a build here in the forum that is built with the same motherboard you have.

No of course you don't have to use the extra kexts for Bluetooth. I used them for my problem with the jerking mouse. (It works a bit better, but does not solve the problem completely).

No, unfortunately you cannot use the internal Wifi and Bluetooth. You need an external solution like a Fenvi-T919 or similar.
There is an experimental solution for the internal Wifi/Bluetooth, but without guarantee. Here you can find the instructions:

Otherwise check out my Clover EFI or OpenCore EFI. (Depending on what you use) It should work, I don't remember changing any extra settings for audio.
