I find restarting helps to smooth out everything again, but run it for another few more hours, the lag returns. I couldn't risk crashing in the middle of doing something.

If it is running well on your System then good for you. But I also noticed the "Memory Used 16.58 GB". On Big Sur, I have the same apps opened, and only using 5.05GB. Guess it is hard for rich people to understand a poor person's situation :(

I can see how much RAM is being used on Big Sur vs Monterey, and look at CPU usage too. But that will have to wait, til the next upgrade. Will continue on Big Sur for now.
If you think about it, is not a completely crazy statement. I can always test out the system resource usage, on both Big Sur and Monterey. But that will have to wait til Monterey 12.1 is out. My Geekbench is about the same though.
Is all making sense now, Monterey on Intel is running on a virtual machine. That is why the OS will need a few CPU cores, and probably 8GB to run well. In this case, I guess my computer on Monterey can only run 3 applications at the same time well. Oh well, my Hackintosh days are soon over...
I suspect Monterey is re-written and tailored to M1 chip, and running some translation engine for Intel chips. Big Sur already felt strange, especially the mouse, it was like it was written for touch instead. Just hope Cycles in Blender gets metal support soon, otherwise, is back to Windows.

This may sound silly, but did you do a OC Clean Snapshot after adding the Kext in ProperTree, or put the kext in the right order in OC configurator. And you might need to reset the nvram.
