Just a workaround !
1. Install bootloader of Windows7 on Xp partition.
2. Create a booting item for XP with EasyBCD on bcd in c:\boot folder
3. Use Cover to bootchain Windows
On c:\ you should have boot folder and bootmgr from windows7 and all other stuff from Xp (NTloader ...)

I have patched A04 Bios for DELL Inspiron 620S and i got AHCI option enabled ...
I Have installed OSX Lion on my HDD and it works fine ...
(You must flash Bios from Windows)

I'm looking to install OSX on a Dell inspiron 620S Desktop too, but no AHCI option there is in Bios.
Up to now , Dell don't releases any bios upgrade to enable ahci ...
So we have to wait or to look for some patched bios to enable it.
On dell Optiplex 755-760 i can confirm that osx can be...
Before you give up, try to make active sdb3 win7 partition on sdb drive , this should resolve win7 problem.
Doing so, you could loose unix booting ,on the other hand.
You need to update only if you want ....
10.7.2 ---> iCloud, Find My Mac, etc.
10.7.3 ---> iMessages beta
I suggest to you to upgrade to 10.7.1 (no issues and very small update )
your issue should be caused by second hd.
you have installed win7 , without the other sata hd, so when you connect osx hd, windows7 loose the partition scheme ... i guess .
you should try to modify booting flags on win7 using easyBcd to look the proper partition to boot win7 ...
