I had the very latest Catalina on OpenCore 0.6.0. I tried to update the EFI folder to 0.6.3 and failed. I then created a opencore 0.6.3 EFI folder from scratch, and that worked rather quickly. Then I used the standard MacOS upgrade feature, with 5-6 reboots. Only problem is with a virus checker...
