Went through my notes & found it. Thanks for posting it as well
On my reboot, it correctly picked up the right ssd & booted into it after 5 secs, so I am not sure what the heck was going on earlier with the extra items (which now do not show up) & the really odd bios behavior earlier.
...and back.....
Went back into BIOS & verified it was F6i
Double checked all settings & disabled secure boot in bios & removed RX 580 DP into z390 for now so it will just use the igfx & booted back into clone HDD which was on 12.6.3
Rebooted back & picked the other "Macintosh HD" & here we are...
I was on F6g
1. Took a backup of the BIOS to the USB
2 Flashed to F6i. Screen went black, presumably it finished
3. Hard power off & on & back in bios
- cfg lock disabled
- internal wifi disabled
- XMP set back to 1
- gfx set to igfx ( that's the config I am using on my OC EFI)...

Looks like CFG_LOCK is enabled by default. I'm reading Dortania's guide.
If there is an easier way in the Bios itself, please let me know.

Unless, I'm mistaken, you should be able to update to oc 0.9.5 first & stay on Big Sur or go to Monterey
& also switch to Intel Wifi & keep it there for a few weeks as a stability test & then do a direct upgrade to Sonoma

If you enable iGFX, then you may be using the USB-c/TB out in which case the BIOS will not show at the screen
This also assumes that you have a video card in there where you have DP Out from video card -> DP IN on motherboard
To see the BIOS at all times even with iGFX, use the DP out from...
1. Make sure you are not using some XMP (extreme memory profile) that is causing some instability in the bios
2. Keep a phone handy with the camera pointed at the screen & record a video (for yourself) when the verbose boot sequence starts.

or have mismatched memory modules ?
