I have 3 hard drives in this hackintosh
in one I have os x mojave that I still use for eyetv3, eyetv4 does not work well in ventura, the remote control or the epg guide does not work.
on another disk I have os x ventura as main system disk
and in another I have sonoma which is the test disk
updating open core is very easy
I have a USB with an efi partition and I create the new opencore in it by copying the one I have on the hard drive and dragging the opencore and kext files into it, then when booting into bios I tell it to boot from the efi partition of the usb.

It will automatically give you generic serial numbers.
You can also click on the boxes that say "generate" to add generic serial numbers
To disable a kext you have to click with the mouse on the enable box in the kext vega56
If you do not have the DW1560 wifi card, disable the broadcom kexts.
