Sorry, I haven't had a chance to test this for you yet! I've been too busy with work, and luckily my system has been stable up until today when I tried to check in on this thread and then it locked up. With all three monitors hooked up I tried encoding with AME.
Using OpenCL it locks instantly...

I've been using a Windows machine to encode. With a 8086k running Windows 10 it is able to encode faster than my hackintosh with a 7900x. I can only hope Adobe makes some progress on both stability and performance.
I am using 3 Benq pd3200u monitors.
I did use Metal on my last encode with Media Encoder. It worked fine other than Media Encoder hanging after it was finished encoding. A force quit took care of that.

I have a DeckLink 4K Extreme. It was working fine before I created my SSDT. I haven't had much time to play with it since, but it seems to be working fine now...just a quick couple of tests.

To be able to use all 3 DisplayPorts on a Vega Frontier Edition I installed the NvidiaGraphicsFixup.kext
This allowed me to run triple 4k displays over DisplayPort. Previously I could only run 2 through DisplayPort and 1 through HDMI
