Solved—I ran the installer a 2nd time, and noticed that, after the 2nd reboot, you MUST choose the Preboot installer option until it goes away. Afterward, boot from Preboot. Works great! Just need to change some menu items in Clover to pretty it up.
I’ve spent the last few days jumping (or trying to) from Catalina to Monterey.
I think everything is pretty good to go, except, after 2nd restart during installation (clean install), I have no option to “boot Mac OS from.” Instead, I can boot my install media (USB) or Recovery, Preboot, etc...

I tested the the file in VLC. I can say it does PLAY. I also played a purported h265 video with a .webm extension. Is that sufficient to suggest that everything is working properly, at this point?
I still get a hang and can't boot (see screenshot), when I use those exact kexts. My Other folder (which hopefully I haven't messed up, at this point), in a bootable state, looks like the other screenshot included here. Not sure what's tripping it up.
I think I'm going to have to look into which kexts I need vs those I don't from the release folder--because when I just dropped them all in Other and hoped that Clover wouldn't choke, it choked! :) That's okay, but it's a project for tomorrow.
Is there any other way for me to verify that things...

I downloaded HWMonitorSMC2. It runs in the menu bar and displays NOTHING about display, anywhere that I can find. I tried HWSensors--it displays nothing about ANYTHING in the Manu bar.
H.264 PLAYS in QT--I can't say more than that. Not sure if it's using the gpu or not.

I don't have either of those installed, and I'm not sure how to check if the gpu is being used for those (formats?). I'll look it up now, to save you explaining the mundane, but I'll wait to hear form you as to whether or not I need to install those items. Are they Kexts or what?
I neglected to mention--when I made changes to the FOLLOW UP version of the plist, before trying it on the first one successfully, I simply got the "no" sign again.
Before I try that one--I (on a hunch that something was a miss) duplicated the working Plist you sent me (the first one). Then, I made the suggested changes to the Devices settings (see CC screenshot). When I rebooted, my GPU IS showing up in About this Mac (see Screenshot).
So, do I still need...
I re-downloaded the config file to ensure that my copy wasn't corrupted.
I copied in and verified my SMBIOS info.
The changes (in the bottom photo) were already present in the file. The model was already a string value rather than data.
I still got the "no" screen instead of apple logo...
That Config didn't let me boot (got the no screen instead of the apple logo with loading bar), BUT the beach balling and stuttering seems to be fixed after a reboot with the former config you gave me. It's a little early to say for sure, usage-wise, but D seems okay now.
