The only way I found to avoid reboots without install the update was using a Boot USB disk Opencore 0.76 so did updatting macOS 11.6.2 to 11.6.3 on SSD, 12.1 to 12.2 on M.2. Except the hard disk 1Tb from 11.6.1 to 11.6.3.
