Lol I did exactly the same thing. On reboot there were 2 Macintosh HDs, instead of laeving it on the one selected I switched to the other one so no update happened. Even worse is had to wait another 45mins for 11.1 to download again, crazy it wasn't cached.

I was unable to delete the snapshots inside Carbon Copy Cloner, it said "CCC was unable to delete some snapshots. Try removing the snapshot(s) after restarting the system."
Also the tmutil utility can't delete snapshots that are com.bombich.ccc.

usually configuring the USB ports correctly with a SSDT fixes many issues including reboot on wake issue so maybe it'll work on these Dells too?

In theory it should but in my setup ApfsDriverLoader-64.efi is unable to locate the driver so I still have to copy it to EFI myself. So worth testing that alone before upgrading many other things at the same time.
Hardware decoding of h.264 needs QuickSync enabled which you can find a guide on. Even though you have a GPU you actually need to re-enable the CPU's integrated GPU by setting the correct platform ID and you can use MacX Video Converter Pro to check if it worked.
The first post does say there is a new AMD driver in this update. I’d guess it is defaulting to YCbCr instead of RGB for unknown displays probably a bug.
