I've been experiencing the same issue. The upgrade from Big Sur 11.6.1 to Monterery 12.0.1 went smoothly and everything, but after 5-10 min of using the computer, the screen freezes and I have to do a hard reboot. I'm going to try this caffeinate -d trick and see if that works for me as well.
I've only updated once so far. I went from OC 6.5 to 6.8 and didn't have any issues. I think it's important to backup your files before doing any update. Just FYI.

I had pretty good success with turning on the AI overclocking feature in the BIOS, then going to the advance settings>Ai Tweaker, and switching the CPU Core Ratio to Sync All Cores, and setting that to 51. I didn't touch the voltage settings at all, and I let all of the AI features handle that...
I updated to the current BIOS version as of April 4, 2021, and made sure I was using OC 6.5 before doing the install. It also looks like I used just one RAM stick in B2 to get everything running, then I added in the rest of my RAM after setup.
I like to tinker with my computers, so I tend to apply liquid metal to my CPUs and squeak out another 10-20% on my machines. I do a lot of C4D and AE rendering work so it's nice to save as much time as possible.

I got Big Sur installed. I had a little issue initially but then I saw that I need to use OpenCore 0.6.5 to make the installation work. Thanks for the great guide!
