So, I am happy to report that I finally got to the bottom of my (major) issue(s)! I needed the two Catalina ICH10 patches linked above and an appleAHCI patch (search Mojave 10.14.4 SATA Hot-Plug not working). These have fixed my freezing and HDD issues, and my system runs well on my SSD.

Ok, I was able to boot into the problem system with -x and did permissions/cache from there. This has recovered my system! Thanks for the help (though I still couldn't find how to do it in Catalina through the Recovery disk.

I used Kext Wizard to run Repair Permissions and Rebuild Cache, but it didn't fix the KP. To be clear, I am able to boot my High Sierra, and am trying to fix my Catalina drive. I did change the target drive to the Catalina drive, but still KP.

It is worth restating that my system ran Catalina without freezes when using a non-SSD. It did, however, experience poor performance, hangs and beachballs.
