My GT 640 gives impaired graphics but after install replaced with a GT120from apple and that works but not for install. It seems a DP is needed. Also some 600 series are kepler and some Fermi and i don't know how to tell the chipset
a similar problem occurs with mac pro 1.1 and el capitan ... would post link if useful but I worry about breaking rules.

Later versions of OS always support more cards...
You could try nvidia drivers. BUT have a backup or you may end up with black screen and no way to fix it...
Make sure you have the right nvidia driver if you go that route...

What Mac Pro do you have ?
If it is 3,1 it will run Yosemite. No mods.
If it is 2,1 or 1,1 it won't without mods to kernel file.
These machines run 10.7.5 (Lion).
You can run Mountain Lion through Yosemite on these with mods and different video card.

Opening up an iMac is not fun.
There is a video on tube showing how to check fan noise.
Essentially you can stop fan and also accelerate it.
Change in noise would indicate fan as source.
HD runs at constant speed.
Another test is run iMac off an external drive with internal HD unplugged...

I have had no problem with Yosemite and sound with MP 1,1 or my MP 4,1.
In sound panel check that alerts give sound.
Try headphones and speakers in all jacks.
Try toggling airplay.
Check settings in Itunes.
Use audio/midi utility and check sound there...
