Update went smoothly for me. As usual no issues. Seems that with a legacy system that I am using it is almost fail safe. Never had any kernel panics with updates since the days of Mavericks. I usually update Clover whenever there is a new version available.

change your smbios. Mac Pro 3,1 smbios is not supported (Only up to 10.11.6) Most universal one to work is the imac 14,2 system definition which supports the current MacOS Mojave. I am using imac14,2 smbios with a 1st gen i5 without issues

Your ATI has no metal support far as i know so would not work in mojave. Mojave works with minimum GT710 nvidia, minimum HD4000 intel graphics not too sure on Radeon graphics. I think 560 or higher. There is post with supported options for mojave metal requirements

I used plist from multibeast and made small changes. Boot verbose and take a photo of the error

My disks are formatted as GPT. I cant install macOS if it wasnt. Im still using a legacy bios with clover so my disk is formatted as GPT. I have two disks. One SSD formatted as GPT as well as a 1TB formatted as GPT.
My idea is that my bios looks for the EFI partition with clover and boots...
