I have Z490 Vision G and it works very well.
Open your config in OpenCore Configurator, "Device Properties".
Add new device: PciRoot(0x0)/Pci(0x1,0x0)/Pci(0x0,0x0)
Set "CSM Support: Enabled".
Don't save, don't reboot!
Go to GPU options, now you have option "Initial Display Output", set iGPU.
Set "CSM Support: Disabled".
Save and reboot.

After macOS installation add boot flag igfxonln=1 to your config.plist to fix a monitor not waking up after sleep (I mean display sleep, not system sleep).
FYI, you can use last BIOS version F20, it works well for me.
Plz try to set "CPU Base Clock" to 100.0 MHz or 100.01 MHz, not Auto, and test your Apollo Twin.
CPU Base Clock may affect audio USB devices, in "Auto" BIOS sometimes set it on 99.95 MHz or something like that...

BIOS F20 works well (don't forget to disable "Resize BAR")
If you want to use iGPU for image output, you need boot flag igfxonln=1 to fix issue after display sleeps and wakes up - my display didn't wake up without this boot arg. I mean only display sleep...
Do you add information to both, Vision D and G manuals? I see it only in "Vision G adaptation" part, but @Higgie had USB-audio issues on Vision D, and he wrote after setting "CPU Base Clock" it works well.

On my very-old system in 2010-2012 (Core 2 Duo) I had the same issues with USB audio interface, I fixed them by setting this parameter correctly in Clover config.

I STRONGLY recommend to set "CPU Base Clock" ("Tweaker" page in BIOS Setup) to 100.00 MHz, NOT "Auto".
With "Auto" setting my system starts with base clock "99.95" MHz (you can check it in "System Info" in your BIOS Setup) and I have some issues (clicks, "digital noise"...
