The latest version is working quite well. Just tested "Reinstall" on a USB flash disk, but noticed the following:
If the EFI partition has enough space, then the procedure works properly.
If the EFI partition runs out of space, then the App still reports success, but in fact the...
Okay, here goes nothing!
Please copy the two attached SSDTs to the OpenCore OC/ACPI folder.
Disable any pre-existing Thunderbolt SSDT.
Add references to new SSDTs to config.plist --> ACPI section.
Reboot.
Run IORegistryExplorer and export the registry using File --> Save As... Post the file...
It's working nicely now. Two immediate observations:
Click outside to hide does not seem to work (it did work in earlier version) Nevermind, it's working.
The name of my Big Sur boot disk is Big Sur, but it appears as VM
My Windows 10 disk is a SATA SSD so it should say "SATA" instead of "PCI"...

The latest version crashes on launch when I use it on my B550 Vision D. I haven't tried it on the other Hackintoshes yet.
Please have a look at console log and diskutil output, both attached.

Thunderbolt hot plug is already configured properly according to the IOReg file you posted. Some devices might not operate as nicely as others. But hot plug is already enabled!
Yes. We use platform ID 0x3E980003 to set iGPU into headless mode, so it won't output a video signal, but it will be used for compute tasks such as QuickLook and Preview.
It seems that iGPU is disabled in BIOS. Please do the following:
BIOS Setup --> Internal Graphics --> Enabled (not Auto)
Save settings
Log back into macOS and check Hackintool --> Platform ID.
Then check QuickLook / Preview.
This might indicate that WhateverGreen is not running. Please do the following:
Type kextstat | grep -v apple in Terminal and post the reply.
Download and run IORegistryExplorer and select File --> Save As..., then post the saved file.
I assume you tried the OpenIntelWireless drivers? In particular, Itlwm and IntelBluetoothFirmware.
Yes one more thing please -- the IOReg file. (IORegistryExplorer --> File --> Save As...)
My ASRock X570 Taichi Ryzentosh with RX 580 GPU is also connected to the same monitor. Will see if HDMI blank-out occurs with RX 580. My Z490 Vision D and Z390 Test Bench are connected to an AOC AGON monitor, both via HDMI and both with RX 580 -- with no blanking problem. So this might affect RX...
