The audio mute button (Fn + F7) does work. And so does the volume up and down (Fn + F8/F9).

I had a brief look at your Clover folder. The only thing I noticed from a glance is that in the kext folder all those 10.x are still present. But I guess that's not the reason why sleep is not working.
So you'd need somebody more experienced and skilled than me to make sense of those problem...

When you already have a working installer it should be possible to copy missing files, like additional kexts, efi-driver or config.plist to the EFI-Partition of the USB stick (its FAT32). But for creating the installer a working macOS is obligatory.
