It is simply a choice made by Apple to enable HDR only on HDMI or Thunderbolt; HS I don't know why but... This is a note from Apple support posted recently in March 2022 that explain the need to get HDR video https://support.apple.com/en-us/HT210980

Unfortunately, HDR works only if you connect your DisplayPort cable to the Thunderbolt port; using DP->DP connection HDR is disabled.
