I've identified a couple of things that might help to find the root of the problem, that's causing Adobe apps / Illustrator to become extremely laggy. The issues with Illustrator / Adobe Apps running slow has only started since upgrading to Catalina (10.15.5).

The device ID seems to be update (via using a spoof ID) however the model is showing incorrectly. And no headless GPU.
I forgot to attach and updates Debug Zip.
I've removed the kext from /L/E and update the Kext.
It seems like the GPU Name isn't showing correctly and GPU Device ID isn't matching up with the one I set in the config.plist when viewedin Hacktintool. However they're correct in IOReg. Any ideas why?

I don't believe so. I think it was one or the other. Which ever one you decide to use I think it had to be set as the default in the Clover Config or boot config. But to be honest, I can't quite remember as I ended up switching completely to the Radeon RX 570.
