I tried the direct update using the latest opencore 090, and it hangs on the first reboot, just a black screen with the white apple and no progress bar, any ideas what my problem might be, I'm on Big Sur 11.7.3

Did you update your Vanilla AMD kernel patches? You'll need to do that at a minimum, I'd recommend also updating OpenCore and all your kexts. https://github.com/AMD-OSX/AMD_Vanilla

I can only find 3 of the four lines the guide is referring to, and the lettering is different from the guide, I would hate to brick my working Big Sur install, I'm tech savy, but new to hackintosh, so I've got some learning to do yet, any advice would be appreciated, I'm using OC 0.9.0 by the way, and using OC Auxiliary tools my kext are the latest according to it

I get "C1E81A000000" and don't know what to alter

So you didn't update your patches as leesureone suggested!. If you want to update to Ventura then you need to download the patches and add them to your EFI. There are four algrey-Force cpuid_cores_per_package replace values that you need to change for your 6 core 3500, so yours will be;

B8000000 0000 > B8060000 0000
BA000000 0000 > BA060000 0000
BA000000 0090 > BA060000 0090
BA000000 00 > BA060000 00

@craighazan is 100% correct, if you make the changes to your EFI folder and then add it to a USB Flash Drive you can't brick your install. To be safe also have a backup of your data first so you don't lose anything you can't get back if things do go south. EDIT: If you still need help zip and upload your EFI folder without serial numbers and one of us will modify it for you. Better if you can do it yourself though.

And just to be clear, you are changing the Replace data value, not the Find data value. This is what my patch looks like for the Ryzen 5700X.

Ok, so where do I get these "patches"?
I went to the link and all I can't find anything to download

There were in the link, you have to select the code to download as a zip but here they are pre-edited
