I'm just debating whether a combination of these two adapters would allow me to plug in my Broadcom WiFi/BT cards into the USB.

Well the M.2 to Apple edge adapter clearly wants a USB power feed because the white socket is there.

So, would it work using 2x USB ports? Might well do. Bandwidth would be low if so.

Hmm… it took me a while to figure out what the contraption would be.
Apple WiFi module in black adapter to convert the proprietary pin layout to regular mini-PCIe.
Black adapter in green adapter, plugged into USB port.

This likely will not work because the green adapter expects to talk to a SATA controller on the mini-PCIe side.
