OK deep breath...mobo was not set to boot from UEFI for storage settings.
Hopefully almost finished :)

Is there a way to remove all but the necessary boot entries from the motherboard boot menu?

First thing to do is make sure all but the macOS drive is connected. Then you can read some guides on this site on the topic. It was a common problem years ago. One reason so many people switched to OpenCore.

Search: Remove Clover boot entries and read up on it.

I was able to get Multibeast built a little at a time. Looks like that bug where you have to match your computers year to match the year of the Multibeast version is still a thing. Once I set computer to 2019 to match this verison, no more failures when building my config
Making a backup dmg of my basic system as I type this :)

So far I can't find any info and other people I ask don't seem to understand what list I'm talking about.
It's the list from when you press F12 on startup
