OpenCore config.plist question

I am trying to build a new Hackintosh, last one I did was back in 2011. I have been trying to learn and understand the OpenCore method.
What's puzzling me is that every time i build my EFI folder the config.plist file is missing the BOOT section. Can someone tell me why?
 
It’s in the documents folder of the OC download, called sample.plist. Copy it to your EFI and do a snapshot, rename config.plist
 
You might want to fill in the motherboard and cpu on the left. It will help others help you.
 
Well I tried pulling the sample.plist and renaming it config.plist and then doing a snap shot in Proper Tree and all I get are the ACPI, KERNEL, MISC, & UEFI section. Still missing the BOOT section!
