Putting together a shopping list for my very first build. My goal is to have 2x M.2 SSD so I can run Windows on one for my son to game and Mac OS on the other for my audio/video editing. If you see any issues with what I've selected so far, please let me know. Thank you!

In addition to the unsupported RTX GPU, Z590 boards do not allow to fall back to the (supported) iGPU of your i7-10700K and some problematic behaviour has been reported (e.g. PCIe link to the GPU dropping to x1 for no reason). You should rather pick an equivalent Z490 board.

You can't run MacOS on that machine (not with graphics acceleration anyway) due to the unsupported RTX 3060, and as others mentioned you can't use the CPU integrated graphics either due to the Z590 motherboard.

It is best to switch to a supported AMD graphics card (say RX 6800), but if you don't want to do that, you have to at least switch to a 400 series motherboard so that you might be able to fall back to CPU integrated graphics when you want to run MacOS.
 
To be clear:
Switch to Z490 in any case.
If an RX 6800 is acceptable for your gamer son and fits your budget, go for it and you're both set. RX 6700 is not supported, but RX 5500/5700 are.
If the gamer does want an RTX and iGPU performance is acceptable for you under OS X, you may have the RTX under Windows but make a SSDT to disable it under OS X and use the iGPU instead. Z490 board absolutely required, and you'll have to work out how to deal with the screen cables.
