Does installing the discrete GPU need some config.plist editing or kext installation? (I'll stick to Catalina as long as I can...)

Ok - As you're using the graphics of the CPU you will have to make a small adjustment in the BIOS to either use both iGPU and dGPU or just the dGPU. In the config.plist it all depends on what card card you install, if it is a type that is installed in real Macs it's just plug and play like the AMD RX series plus the (ridiculous priced) ones fitted in the new M1 Macs. Some cards call for an entry in 'boot args' to avoid 'Black Screen' at boot, the subject on 'Black Screen' is vastly documented with tips and cures. Do some research on the best way to go or what cards others are using and recommendations. Good luck.

Thanks for your advice. AMD RX 580 is currently overpriced here in Europe, as long as the price will reach the 200-300 range, i'll buy one...

Absolutely! - Crypto mining has pushed the price of AMD cards to some ridiculous heights and to be honest I don't see the current value falling in the near future so for the time being stick to the iGPU until these prices come back to a sane level.
