Gigabyte Z390 M Gaming build with working NVRAM

OK, did the gibMacOS Tutorial ~ How to Download macOS Catalina Directly from Apple

It appears that I have successfully created an Install macOS Catalina application. However, the next step in the Tutorial is to run UniBeast to create the USB. How do I get back to OpenCore or Clover? Do I just stop at this point and pick up here at Page #1, Step 5 for Create Your USB Installer And Install macOS?

By the way, when I do a Get Info for the application, it says Kind: Application (Intel)...

Once you've downloaded the Catalina installer, proceed with the instructions in post #1.

So, I've copied the Install macOS Catalina application to the USB drive. When I do a List with diskutility, this is what I get:

I loaded EFI Agent and attempted to run it with the result:

I also couldn't mount anything under disk6 or disk7 with diskutil mountdisk command.

Anyway, not sure what happened...

Right click EFI Agent and select Open.

I reinstalled EFI Agent, did the right click to open and the result is that the error message didn't appear. However, there is no indication that it is running. No new windows show up and it does not appear when I do a Command - Tab. It does show up in Activity Monitor with 0.0% CPU and as an Inactive Process. It is labeled as Intel Architecture instead of Apple. That would suggest that is should be running under Rosetta 2, but that doesn't seem to be the case...

EDIT:

AH!! Noticed the icon in the menu bar. Very tiny on a 3440 x 1440 monitor...

So, EFI Agent looks like this:

I now have Untitled (disk6) and EFI (disk6s1) mounted after that screenshot. However, somehow Clover is in the EFI folder and not OpenCore. What do I need to do to change that? Don't know how that happened as I never downloaded Clover...

Just replace the Clover with OpenCore if you want OpenCore.

I swapped the Clover folder for the OpenCore folder. I get this:

A422A2B6-8B7C-4652-B320-750E33330593.jpeg

Without touching anything, it will time out and this is next:

The cursor is not active at this point, so the only thing I can do is hit return. But, all that does is roll back to the GIGABYTE splash screen.

From the splash screen, if I hit DEL, I get this:

1DB2A48F-9F24-4225-80D2-B99A4F11432E.jpeg

If I hit F12, I get:

6C1BE3CC-8F25-431E-A808-0B7D3D920E3C.jpeg

If I choose OpenCore, I get the splash screen without the DEL, F12, END choices and it will roll back to the EXEC, RESET NVRAM icon.

If I choose Enter Setup, it takes me back to the Easy Mode screen. When I exit by ESC and go back to the splash screen, I chose END and that does go to the Q-Flash screen.

I previously updated the BIOS to F9L.
I does know that OpenCore is present as it shows up on the Easy Mode screen.
What should I check and/or try next?

Anyone else having NVMe speed issues?
I have a WD Black 512GB, (this is the last-gen and not the current higher speed one) its read is 2050, and write is 800. I am getting 1000-1400 read and 300-400 write.
Any idea how to get it faster?
Thanks in advance.

I am on the latest stable version of Big Sur and on OC 0.6.4 the one from this thread.

You have to set the boot drive in in BIOS.

Have you finished installing macOS yet?

No problems with NVMe SSD speeds here...
