I am not sure I understand what you have been doing. Please clarify. My configuration is only using OpenCore no Clover.

My internal SATA M.2 Crucial MX300 SSD is using Clover 5019 and Boot fine to CXatalina 10.15.7!
If i try to use your latest 8 AIR_EFI on my USB Disk Toshiba250 that already has Catalina 15.7 and in application folder Install Big Sur, at Boot on OpenCore i can see all my bootable disks after a first EFI folder that contains my Clover 5019 config from the EFI of my Crucial internal disk.
I i try to boot direct on any of the available disks, as previously said, nothing hapens while being STUCK on the Apple icon! The only way to boot is use the EFI icon and then use the Clover config to boot from any of the available disks...
So obviously your AIR_EFI is not directly usable? It must be completed...

v8.0 works for me...
v7.0 didn't boot.

But V.8 was lacking a Boot folder so i used the one from V.7 either?
Maybe that the reason why it still doen't work?

Reading again the installation guide, i realize that there is a lot of work to do... Idiotically i thought the only thing to do was copying the AIR_EFI ... So i have to built a Symbios...

It should work without Symbios.

OK i add your BOOTX64.efi but still the same mess: unable to Boot from any of my bootable drives...
Yet i only copy & paste AIR_EFI but this is obviously not enough! Before when Sakoula was on Clover, it worked immediately without any other fiddle...
So i will try to follow his guide...

I successfully could build a SMBIOS...
Now trying to check whwether or not CFG is locked or not i Boot from OpenCore, hit space and then a lot of different command are available but NOT the required one :
select Modify Grub Shell???
Also Where is Verify MSRE2.efi?

To have any success to Boot in OC shall i need to kill Clover in the EFI of the internal SSD?
IT's far to complex to have this migration easily done without any help!
In my BIOS there is nothing such as CFG lock?
And as said previously:
On the OC menu hit space and then Select Modify Grub Shell?
But holy sh,,, this menu doesn't exist!?
But Sakoula is on the moon with SpaceX...
