[Guide] Intel NUC7/NUC8 using Clover UEFI (NUC7i7Bxx,NUC8i7Bxx,etc)

For BigSur your need the appropriate kext and you need to be running OpenCore 0.6.1 for the kext to load properly.
The attachment you posted says NUCOC0.6EFI.zip (supposed to be OC 0.6 and not 0.6.1).

The new kext works perfectly fine for Bluetooth and Wifi but however I can't get Handoff and Airdrop to work.

Yes, it should work fine. The USBC port on the back of the NUC was not working for me the USBC fix without it. I posted OC 6.1 yesterday if you want the newer version.

Can I do the USB port configuration when my display is connected via USBC - DP or I should connect it via HDMI?
another question - once I did the USB port configuration - is it good for the next open core versions as well?

It may not matter which display output you use but to be as accurate as possible HDMI is what I would use. Once you configure your USB ports the result is good for any boot loader version.
 
Restart didn't work either. Can you share the link on how to do USB port configuration?

Btw, BT worked after I logged in to Windows, connected to some device, restarted the machine, went to hackintosh, the BT will worked.

Same solution like this

Thats what we used to have to do before the introduction of the intel bluetooth kext. Usually that was only a temporary fix and performance was sketchy. Sometimes it would work, sometimes not. Hopefully you are good now.

That trick is only useful for early version of IntelBluetoothFirmware.kext. You don't have to do this any more for newer versions said 1.0.3+. Can you clarify what Bluetooth device you were playing with? On my side when I did this (paired and connected) with a BT4.0 Logitech MX Anywhere 2S mouse under Windows), reboot into hackintosh, the mouse was still not working and not paired at all. Other than that, all Bluetooth peripherals (Audio, PAN, BT3.0 mouse, Apple Trackpad2) works great for me.

I haven't tested this kext yet using BigSur. In this post it was mentioned that it is necessary to log out and log back into the Apple account to have the Handoff and Universal Clipboard working. Airdrop is not yet an usable feature.
